21st July – Mexican delights

I love Mexican style food. For me (James), it contains so many flavours that I love.

There are a couple of Mexican themed meals in this week’s plan. I’d have added more, but I didn’t think I could do it for every recipe 😉

I hope you enjoy them as much as I do!

Top tips

  • Chop up a load of radishes for the pickle for the Healthy Huevo Rancheros. They can be stored in the fridge and this is a great time-saver for the next round!
  • If you can’t find tempeh for the Tempeh Sandwich, you could use tofu or mycoprotein like Quorn (or substitute for the Chickpea Salad Sandwich)
  • The Mexican Bean Stew freezes well so make a big batch – it’s cheap too!

If you have lots of leftover ingredients in the fridge we highly recommend turning them in to Buddha Bowls or Burrito Bowls! There’s so much choice, and you can throw together virtually everything you have leftover with a tasty sauce!
