Easy Green Bean Salad

This easy green bean salad is ready in a staggering three minutes. Not many lunches can beat that!

Ingredients

  • 1 jar green beans (a 24oz/660g jar wet weight is about right, or 1.5-2 cans))
  • 3 tbsp olive oil
  • 2 tbsp vinegar
  • 1 tsp sugar
  • ½ tsp salt
  • ½ tsp pepper
  • 3 tbsp green bean water (saved from the jar)
  • 1 handful parsley, fresh
  • 1 red onion

Instructions

  • Drain the green beans, saving a little of the water.
  • Dice the red onion very thinly. Put the beans and onion in a large bowl.
  • Rip or chop the parsley and it along with the olive oil, vinegar, sugar, salt, pepper, bean water, and parsley.
  • Let the salad rest for 2-3 hours for maximum taste.
  • Done!
