  • 2 eggs
  • 2 tbsp milk (dairy, rice or soy unsugared)
  • 1.5 oz cheddar cheese (grated, could also be 3 oz)



  • In a big microwavable cup whip eggs until there are no streaks of white or yolk left.

  • Fold in half of the grated cheese, milk and ¼ tsp salt and 2 tbsp diced peppers.

  • Cover the cup with a paper towel.
  • Bake in the microwave of 700 watts for 3 minutes, if necessary add another 15 seconds. The top should never be dry (this means overcooked).
  • Serve omelette topped with fresh red peppers, chopped parsley, salt and fresh black pepper to taste
