Carrot and Ginger Soup
Servings: 2 servings (4 as a starter)
- 1 tbsp parsley, fresh (for garnish)
- 1 slice bread (whole wheat)
Clean carrots (and peel if not organic). Roughly chop.
Juice orange or lime.
Put all the ingredients into a food processor and blend until smooth, or mostly smooth, depending on your preference.
Put in sauce pan and cook for 5 minutes, allowing to simmer.
Serve with bread, and/or garnish with parsley or extra lime.
