Easy Green Bean Salad
- 1 jar green beans (a 24oz/660g jar wet weight is about right, or 1.5-2 cans))
- 3 tbsp olive oil
- 2 tbsp vinegar
- 1 tsp sugar
- ½ tsp salt
- ½ tsp pepper
- 3 tbsp green bean water (saved from the jar)
- 1 handful parsley, fresh
- 1 red onion
Drain the green beans, saving a little of the water.
Dice the red onion very thinly. Put the beans and onion in a large bowl.
Rip or chop the parsley and it along with the olive oil, vinegar, sugar, salt, pepper, bean water, and parsley.
Let the salad rest for 2-3 hours for maximum taste.
