Have a Good Avo Cheddar Cheese Sandwich
It's time to make the humble cheese sandwich something to be proud of for lunch again!
Servings 2 sandwiches
- 4 slices brioche bread (Jansen recommends Brioche bread, or use your fave)
- 4 slices cheddar cheese (enough to cover the bread)
- 1 avocado
- ½ small red onion
- 2 radishes
- 1 cup spinach
- salt and pepper to taste
Scoop the flesh out of the avocado and mash it in a bowl. Add a little salt and pepper.
Slice the red onion into really thin rings. Slice the radish thinly, too.
Give the spinach a quick wash.
In this order, place the bread followed by mashed avocado, spinach, cheddar, onion, radish, mashed avocado, bread.
Stick it in the oven at about 360°F/180°C and toast away! It’ll take about 7-8 minutes. That’s it, done!
Make it vegan
Use a vegan cheese, like cashew. There are some that taste pretty decent around now, especially when grilled. Bigger supermarkets should carry them.
Make it gluten-free
Use a gluten-free bread, many different types are now readily available. It should be easy to find in most larger supermarkets or whole food stores. Never be too shy to ask at your local bakery, either!

If you have a cheese toastie machine, throw it in there!
Please note that we don't count items like salt and pepper as one of our six ingredients as we feel most people already have an adequate supply at home :)
