In a medium sized pot add oats, chia seeds, vanilla extract and soy milk.
Mix and cook over medium heat until you have a homogenous thick porridge (about 5-7 minutes). Take off the heat and fold in the Greek yogurt.
In a medium sized pot add the pitted cherries with the sugar. Mix and cook until the cherries release their liquid and it boils until having a syrupy consistency.
Plate in a bowl and top with the cherry compote. Add chopped almonds and some honey or maple syrup if you wish.
