Ingredients

  • 1 ¼ cup (156 g) flour
  • 1 cup (235 g) water
  • 2 tsp olive oil
  • 1 tsp dried yeast
  • 4 tbsp tomato paste (thick stuff)
  • 2 tbsp dried Italian herbs (or oregano)
  • 1 ball low fat mozzarella (1 ball = 125g/4.5oz)(use regular if you prefer) (and shredded is even better!)
  • 24 olives
  • 1 handful basil, fresh
  • 1 handful rocket

Instructions

  • Blend the yeast, water and flour together until smooth.

  • Pour into a pan that is wiped lightly with oil. Pour in half the dough to make one pizza base.
  • Give it a two or three minutes to set, then flip. Cook with a lid on for best results.

  • Add half the tomato paste and mix in half the dried herbs. Spread it evenly over the base.

  • Cook with lid on, at a medium heat. About 8 minutes should do it, check the bottom occasionally to make sure it doesn't burn.
