Ingredients

  • ½ cup (85 g) quinoa
  • ¾ cups (125 g) chickpeas, cooked (~½ can)
  • 1 handful salad mix (spinach, arugula, etc.)
  • 3 oz (85 g) low fat feta cheese
  • 1 small handful raisins

  • Cook the quinoa according to package instructions.

  • Chop the cheese and add with the salad mix and chickpeas to a large bowl.
  • Mix the honey, oil, lemon juice, raisins and water in a small bowl.
