Ingredients

  • ½ cup quinoa
  • ½ can chickpeas (drained and rinsed)
  • 1 handful salad mix (spinach, arugula, etc.)
  • 2 oz low fat feta cheese (or use regular if you prefer)
  • 1 small handful raisins

Dressing

Instructions

  • Cook the quinoa according to package instructions.
    ½ cup quinoa
  • Chop the cheese and add with the salad mix and chickpeas to a large bowl.
    ½ can chickpeas, 1 handful salad mix, 2 oz low fat feta cheese
  • Mix the honey, oil, lemon juice and raisins in a small bowl
    1 tbsp olive oil, 2 tbsp lemon juice, 1 tsp honey, 1 small handful raisins
  • Add the cumin, chili flakes, salt and pepper to the dressing bowl and mix well.
    ½ tsp cumin, ground, ¼ tsp chili flakes, Salt and pepper to taste
  • Mix in the cooked quinoa.
  • Drizzle devilishly delicious dressing over the salad.
  • Enjoy 🙂
