Chickpea Salad with Quinoa

Ingredients
Dressing
- 1 tbsp olive oil
- 2 tbsp lemon juice (white or malt vinegar is also good)
- 1 tsp honey
- 2 tbsp water
- ½ tsp cumin, ground
- Salt and pepper to taste
- ¼ tsp chili flakes (or dried cayenne pepper will do the trick nicely)
Instructions
- Cook the quinoa according to package instructions.½ cup quinoa
- Chop the cheese and add with the salad mix and chickpeas to a large bowl.½ can chickpeas, 1 handful salad mix, 2 oz low fat feta cheese
- Mix the honey, oil, lemon juice and raisins in a small bowl1 tbsp olive oil, 2 tbsp lemon juice, 1 tsp honey, 1 small handful raisins
- Add the cumin, chili flakes, salt and pepper to the dressing bowl and mix well.½ tsp cumin, ground, ¼ tsp chili flakes, Salt and pepper to taste
- Mix in the cooked quinoa.
- Drizzle devilishly delicious dressing over the salad.
