Easy Baked Apples with a Cinnamon Nut Stuffing

- 2 apple
- ½ lemon (juiced, about 1.5 tbsp)
- ¼ cup (50 g) butter (or vegan margarine)
- ⅛ cup (25 g) ground nuts (e.g almonds and/or hazelnuts)
- ⅛ cup (25 g) raisins
- 1-2 tsp brown sugar
- 1 tbsp cinnamon

Wash the apples and cut out the core. Either cut a small square shape into the top of the apple, cutting down to half way. Turn the apple over and repeat with a slightly larger square.
Then simply push out the loose section with your thumb, from the small end to the large end. Alternatively, just use an apple corer.
You can also scoop out the apple if that’s your thing.
Put the apples into an oven dish and pour the lemon juice into the middle of the apple - it prevents the apple from going brown and adds a nice fresh lemon taste to the flavour.
Heat up the butter in a sauce pan until fully melted.
Meanwhile mix the nuts, raisins, sugar and cinnamon in a bowl and add half the melted butter. Stir well.
Stuff the apples with the butter-nut-raisin-mixture and then pour the rest of the butter over the top. Put the dish on the lowest level of a preheated oven (175°C/ 350°F) and bake for 30-35min till the top is golden brown.
Best served warm, either on it’s own, with a scoop of vanilla ice cream or with caramel or vanilla sauce :)
