Fabulous Flatbread Pizzas

Ingredients

  • 1 beetroot, pre-cooked
  • 1 spring onions
  • 2 radishes
  • 1 small tomato
  • 2 tbsp hummus
  • 2 small flatbreads (or similar breads)
  • 2 oz (55 g) low fat feta cheese (or goat's cheese)
  • 1 tbsp basil, fresh
  • 1 tbsp sunflower seeds

For the dip:

  • ½ cucumber
  • 1 handful basil, fresh (or parsley or cilantro)
  • 1 cup (250 g) natural yogurt (dairy or soy)
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 175°C/350°F.
  • Thinly slice the beetroot, spring onions, radish and dice the tomatoes.
  • Spread the hummus on the flatbread.
  • Layer everything else on top, starting with the beetroot.
  • Just make sure the feta and sunflower seeds are the last thing you put on.
  • Put the flatbread on a baking tray, then into the oven for about 9 minutes.
  • Add some chopped fresh basil leaves at the end.

For the dip:

  • Slice the cucumber really thinly, chop the basil and mix everything in a bowl together with the yogurt and season it with salt and pepper.
  • If you have some dukkah laying around the kitchen, USE IT :D
