  • Add the couscous into a large bowl. Pour over the vegetable broth.
    NOTE: Don’t put too much water in - the ideal water level should be just enough to cover the couscous. You can always add more as needed.
  • Finely chop the spring onion.
  • After 5 about five minutes the couscous should be ready, so throw in the chopped spring onions, black beans and corn. Crumble in the tofu.
  • Add the olive oil, lemon juice, cumin, paprika powder, chili flakes and give it all good mix. Season with salt and pepper.
  • Ready!
