High Protein Black Bean and Corn Summer Salad. Simple recipe ready in just 10 minutes, bursting with summery flavours, protein, fiber and iron.

Ingredients
- ½ cup instant couscous
- ½ cup vegetable broth
- 2 spring onions
- 1.5 cup black beans, cooked (~1 can, 15oz/425g)
- ¾ cup sweet corn, cooked
- 4 oz smoked tofu (regular firm tofu works too)
- 1.5 tbsp olive oil
- 1 lemon (juiced)
- 2 tsp cumin, ground
- 2 tsp paprika powder
- 1 tsp chili flakes
Instructions
- Add the couscous into a large bowl. Pour over the vegetable broth. NOTE: Don’t put too much water in – the ideal water level should be just enough to cover the couscous. You can always add more as needed.½ cup instant couscous, ½ cup vegetable broth
- Finely chop the spring onion.2 spring onions
- After 5 about five minutes the couscous should be ready, so throw in the chopped spring onions, black beans and corn. Crumble in the tofu.1.5 cup black beans, cooked, ¾ cup sweet corn, cooked, 4 oz smoked tofu
- Add the olive oil, lemon juice, cumin, paprika powder, chili flakes and give it all good mix. Season with salt and pepper.
- Ready!
