- 3 eggs
- 3 tbsp milk (dairy, rice or soy unsugared)
- 1.5 oz (42 g) cheddar cheese (grated)
- ¼ tsp salt
- 3 tbsp bell pepper, red (diced)
- Black pepper to taste
- 2 slices wholegrain bread
Get Recipe Ingredients
In a big microwavable cup whip eggs until there are no streaks of white or yolk left.
Fold in half of the grated cheese, all the milk and ¼ tsp salt and 2 tbsp diced peppers.
Cover the cup with a paper towel.
Bake in the microwave at 700 watts for 3 minutes and 15 seconds, if necessary add another 15 seconds. The top shouldn't be dry (this means overcooked).
Serve omelette topped with fresh red peppers, salt and fresh black pepper to taste. Feel free to add any other herbs or a favourite sauce.
