Ingredients

  • 3 eggs
  • 3 tbsp milk (dairy, rice or soy unsugared)
  • 1.5 oz cheddar cheese (grated)
  • ¼ tsp salt
  • 3 tbsp bell pepper, red (diced)
  • Black pepper to taste
  • 2 slices wholegrain bread

Instructions

  • In a big microwavable cup whip eggs until there are no streaks of white or yolk left.
    3 eggs
  • Fold in half of the grated cheese, all the milk and ¼ tsp salt and 2 tbsp diced peppers.
    3 tbsp milk, 1.5 oz cheddar cheese, ¼ tsp salt, 3 tbsp bell pepper, red
  • Cover the cup with a paper towel.
  • Bake in the microwave at 700 watts for 3 minutes and 15 seconds, if necessary add another 15 seconds. The top shouldn't be dry (this means overcooked).
  • Serve omelette topped with fresh red peppers, salt and fresh black pepper to taste. Feel free to add any other herbs or a favourite sauce.
    Black pepper to taste

NOTES

 
If you want to make the portion more hearty add a third ounce of cheese to the eggs or have your omelette with 1 whole grain toast.
