Egg on Avocado Toast – a true classic

Now, this is the 4th of the avocado toast lot and it’s already a classic in the avocado toast scene.

Watch that egg!
Anyway, this combo here combines crispy toast with mashed avocado and fried egg. But you have to keep an eye on the egg to make sure you fry it just right. You want the white to be fully cooked but the yolk should still be runny.
I guess you can choose how you want your egg but I think that keeping the yolk a little runny really makes the crunchy toast stand out. And don’t forget that squirt of sriracha once the egg is on the toast.

- Fry an egg in a pan on medium heat with olive oil. Stick the bread in the toaster.1 egg, ½ tsp olive oil, 1 slice wholegrain bread
- Meanwhile mash your avocado, add salt and pepper, sprinkle in some lemon.½ medium avocado, Salt and pepper to taste, 1 tsp lemon juice
- Now put an egg onto the toast.
- Add a little bit of Sriracha (or your favorite spicy sauce) and munch.Sriracha
