There are not many vegetables/fruits that are tasty and can be spread on toast. Surely the main reason why avocado on toast became such a trend!

Sure, many cuisines, and of course hipsters, have come up with various ways of eating them. But, the good old Avocado Toast is probably the most common way to eat them (apart from guac, of course!).

Today’s Avocado Toast recipe has a twist! It includes fried tomatoes!

Fried tomatoes for the win

Tomatoes bring an extra burst of flavour to this classic dish. I admit that it does take a little more effort than just mashing an avocado, but it still takes less than 10 minutes to prepare.

Instructions

  • Cut the cherry tomatoes in half.
  • Throw them in a pan with olive oil and let them fry until soft (about 5 minutes).
  • Meanwhile mash your avocado and sprinkle in some lemon.
  • Now assemble everything together, season with salt and pepper. Sublime.

    So quick and so flavorful! I used fresh lime juice vs lemon. had it with freshly baked bread and cucumbers. thank you for the recipe!

      1. Ha! I am not that good Just picked it up at the local supermarket an hour before breakfast. It was still warm. yum. I’ve tried this so many times and different ways at this point, love it!

  2. It’s amazing how much flavor the fried tomatoes add to the avocado toast! The timing on this recipe post was perfect, too – I had avocado mashed with lemon juice in the refrigerator. 🙂
