Ingredients

  • 1 pack of mixed legumes (1 pack = 8.8oz = 250g)
  • 3.5 oz low fat feta cheese (or salad cheese)
  • 1.8 oz arugula/rocket
  • 2 tbsp balsamic vinegar

Instructions

  • Warm the legumes by packet instructions (usually 1-2 mins in the microwave).
  • Give the rocket/arugula a quick wash and pat dry. Layer it on a plate.
  • Add the legumes. Chop the cheese and add that too.
  • Spoon over a little balsamic vinegar and you're ready!
