Ingredients
- 1 pack of mixed legumes (1 pack = 8.8oz = 250g)
- 3.5 oz low fat feta cheese (or salad cheese)
- 1.8 oz arugula/rocket
- 2 tbsp balsamic vinegar
Instructions
- Warm the legumes by packet instructions (usually 1-2 mins in the microwave).
- Give the rocket/arugula a quick wash and pat dry. Layer it on a plate.
- Add the legumes. Chop the cheese and add that too.
- Spoon over a little balsamic vinegar and you're ready!
