HP – Chickpea Salad with Quinoa

Ingredients
- ½ cup quinoa
- 1.5 cup chickpeas, cooked (~1 can, 15oz/425g)
- 2 handful leafy greens (spinach, arugula, etc.)
- 3 oz low fat feta cheese
- 1 handful raisins
Dressing
- 2 tbsp olive oil
- 2 tbsp lemon juice (white or malt vinegar is also good)
- 2 tsp honey
- 2 tbsp water
- 1 tsp cumin, ground
- ½ tsp chili flakes (or dried cayenne pepper will do the trick nicely)
- Salt and pepper to taste
Instructions
- Cook the quinoa according to package instructions.½ cup quinoa
- Chop the cheese and add with the salad mix and chickpeas to a large bowl.1.5 cup chickpeas, cooked, 2 handful leafy greens, 3 oz low fat feta cheese
- Mix the honey, oil, lemon juice and raisins in a small bowl2 tbsp olive oil, 2 tbsp lemon juice, 2 tsp honey, 1 handful raisins
- Add the cumin, chili flakes, salt and pepper to the dressing bowl and mix well.1 tsp cumin, ground, ½ tsp chili flakes, Salt and pepper to taste
- Mix in the cooked quinoa.
- Drizzle devilishly delicious dressing over the salad.
