  • Get the potato in the microwave. Nine minutes at 1000w should do it. If using two medium potatoes, seven minutes should be enough. Always poke your potato with a fork a couple of times first (trust us).
  • Wash the beans and let water drain.
  • Dice the red onion into small pieces. Wash bell pepper, cut into small pieces as well.
  • Cut the dried tomatoes in small strips.
  • Throw everything into a big bowl, add the olive oil, lemon juice and finish it off with some salt and pepper. Give it a good mix.
  • Add parsley and cilantro. Season with salt and pepper.
  • When the potato is ready, slice it open lengthways, then a couple of times across. Lay the veggie salad mix over it, and finish with a couple of dollops of hummus. De-lish!
