Ingredients

  • 2 potato (2 medium potatoes = 150g each)
  • 2 tsp olive oil
  • 1 small onion
  • 2 eggs
  • ¼ cup rosemary, fresh (¼ cup fresh = 1 tbsp dried)
  • ¼ cup basil, fresh ( ¼ cup fresh = 1 tbsp dried)
  • Salt and pepper to taste
  • ¼ cup low fat mozzarella
  • 1 tsp vinegar

Instructions

  • Cut the potatoes into thin slices. Dice the onion.

  • Cook the sliced potatoes in a wide frying pan in olive oil on a medium heat for 20 minutes. Half way in add the diced onion. Use a lid as this cooks them a bit quicker. Don’t stir too often or it won’t crisp up.
    2 tsp olive oil
  • Crack the eggs into a cup and give a quick whisk with a fork. Add
    2 eggs
  • Throw in the eggs, mozzarella, herbs, salt and pepper.
    ¼ cup rosemary, fresh, ¼ cup basil, fresh, ¼ cup low fat mozzarella, Salt and pepper to taste
  • Cook for another 2 mins or until the egg is done.
  • Add a splash of vinegar.
    1 tsp vinegar
  • Done!
