  • Mash up bananas in a large bowl.
    1 banana
  • Whisk eggs (using a fork is just fine!) and add to banana paste.
    2 egg
  • Fry gently in a pan on low-medium heat with a little heated oil or butter.
    ½ tsp coconut oil
  • Flip halfway through cooking (about 4 mins) with a large spatula.

NOTES

Tip: Add your personal fave toppings.
Make-ahead? Yes, batter can be made in advance.
Freezable: Yes, absolutely, but keep topping separate.

For the batter:
* 2 tbsp of flax seeds
* 1 tbsp of coconut powder
* A small handful of hazelnuts, almonds or walnuts
* 1 tbsp of peanut butter (we LOVE that combo!)
* 1 tbsp of protein powder
* 1 tbsp of raisins
* 1 tsp of cinnamon
* 1 tsp of vanilla extract
* A few thin slices of apple or pears
* Pumpkin puree (organic)
Topping ideas:
* Honey
* Maple syrup
* Cherries, strawberries
* Yogurt
* Chia seeds
* Sugar and lemon juice

  5. I was just thinking about making this the other day! I saw it in one of my Asian cookbooks, where it was mentioned as a popular dessert, but it had no proportions. All it said was “mash a banana with egg and fry it” haha, so I’m really happy to see it here with an actual recipe 😀

    I loved the recipe!! I liked the outcome 😉 I modified it a little bit though, to make it “ligth” I used just one egg yolk. It was delicious, but it stick a little bit to the pan. Thanks

    1. Yeees, It happens sometimes to me as well when I use an older pan (at my parent’s or a friend’s place). Then I just make “scrambled egg” out of it 😉

        Was super excited to try this recipe. I added a few of the pimped up tweaks suggested for my first go round: tbsp of vanilla flavored protein powder and peanut butter and tsp of cinnamon and vanilla extract. They smelled soooooo good as I mixed the ingredients together! I will definitely do this recipe.

      2. So quick to make. I have used butter and also tried coconut oil. Prefer butter . Had no problem with sticking, but then l used a fairy new pan. l find the texture a little different . Love cinnamon and that gave just enough sweetness.

      1 egg + 1 egg white
      Dash of cinnamon
      2/3 banana medium
      1 Tbs ground flaxseed
      1/4tsp almond extract

          I had such high Hope’s for these. I will try them again and add some of the tweaks I saw above but I don’t know if it was because I mashednthe egg and banana together instead of separately or maybe my banana was too small but it tasted more eggy to me than pancake like. I did add vanilla extract and also some dark chocolate chips to half the batter. I gave it 3 stars because Adding my lakanto maple syrup made it way more pancake tasty. I can see the potential so we will tweak away. Thanks for the recipe.

          2. I was so looking forward to such a nice breakfast option.
            I threw three batches in the trash. After experimenting with three different sizes of pancakes, I could not get any to resemble pancakes. They are mush pile and impossible to flip, After three batches worth , I can say eat scrambled eggs with a banana on the side.
            SO DISAPPOINTING!!!!!
