HP – Perfect Pizza Pancake Recipe
These pizza pancakes are perfect for lunch or dinner – super simple and full of the most exciting base and taste combos make it the best of both worlds!
Servings:2 large pizzas
Calories:580kcal
Ingredients
- 1 ¼ cup flour
- 1 cup water
- 2 tsp olive oil
- 1 tsp dried yeast
- 4 tbsp tomato paste (thick stuff)
- 2 tbsp dried Italian herbs (or oregano)
- 1 ball low fat mozzarella (1 ball = 125g/4.5oz)(use regular if you prefer) (and shredded is even better!)
- 24 olives
- 1 handful basil, fresh
- 1 handful rocket
Instructions
- Blend the yeast, water and flour together until smooth.

- Pour into a pan that is wiped lightly with oil. Pour in half the dough to make one pizza base.
- Give it a two or three minutes to set, then flip. Cook with a lid on for best results.

- Add half the tomato paste and mix in half the dried herbs. Spread it evenly over the base.

- Chop the mozzarella and olives, lay half of them over the top.

- Cook with lid on, at a medium heat. About 8 minutes should do it, check the bottom occasionally to make sure it doesn't burn.
- Add fresh basil and rocket at the end. Wash the rocket first!

NOTES
