The 2 Ingredient Banana Egg Pancakes (10 Min, Vegetarian)

1) Mash up bananas in a large bowl
2) Whisk eggs (using a fork is just fine!) and add to banana paste
3) Fry gently in a pan on low-medium heat with a little heated oil or butter
Oh so easy!
Pancakes. Fiddly and frustrating to make, fatty to eat. Taste awesome though. Surely there must be some sort of middle ground?
What if I told you it’s possible to make pancakes from just two ingredients – bananas and eggs? ‘MADNESS!’ I hear you cry. But it’s true.

Health benefits
One banana and two eggs will knock up a brilliant breakfast for one person – and one that’s full of vitamin b6 – which is normally found in fish and meat.
It helps to stop skin rashes, fatigue and mood swings and is used with over 100 different enzymes in the body (banana benefits).
They’re also full of manganese which is used for bone production, skin integrity and for blood sugar control.
It also protects against free radicals and skin issues, and can even alleviate asthma (2).
Want more? Well on top of they even contain high amounts of fiber, potassium and protein. What are you waiting for?

You’ll need a non-stick pan to make these pancakes work, that’s it. Not happy with your current one? See what you think about this pan. I recently started using coconut oil instead of butter for frying these fellas and I have to say it’s really good! If you want, give coconut oil a shot. Please note the nutritional data does not include oil or butter for frying.

I love these but whenever I flip them they get ruined. So now I just dump the whole mixture into a pan and cook them like scrambled egg
yeees, that definitely works as well and is similarly delicious 🙂
Yesterday I successfully flipped my biggest banana egg pancake ever. 3 bananas and 4 eggs in one batter and one pan – BAM!
Eggs…my favourite food! I gave it a good shot, used a little bit of unsalted butter to fry the pancakes and the outcome was mouth-watering! Just bananas and eggs! It serves great when cravings hit red! #unreal
Woo! Glad you enjoyed, Elena. Haha yes, it certainly hits the cravings when they strike. Thanks for writing!
I don’t even remember how I found this page but I’m glad I did! Tried this out this morning with a few changes – added an extra 1/2 banana, tiny bit of vanilla extract, and cashew butter. I left some lumps bc I love that texture. My 1st one was more on the eggy side but I’m pretty sure it’s because I didn’t have my pan hot enough (oops!). 2nd came out so perfect. Mind thought I was eating banana pancakes but at least I didn’t have the flour carbs.
Thanks for a great idea!
I find this recipe so simple and great. I love to add dark chocolate chips and/or pitted fresh cherries. Yum!
Great you liked the recipe, Flo!
Thank you, made these this morning with plain yoghurt and honey on top, just so light and fluffy and very good, and very filling. Thanks for a great recipe.
Glad you liked them Nicolette! We ate them on our this morning too. With apple sauce 😀
Thank you, the props are much appreciated!
Planning on making a huge batch of these and maybe adding cacao powder to some to give them a chocolate hit.
Do you know if they would freeze well ? It may stop me eating them all in a day 😉 Although that’s not a given!
Hi Jo! Glad you like the recipe. I think these pancakes are awesome too 🙂
Chocolate would go very well I’m sure. I’m also sure you can freeze them, even though I haven’t tried it myself. But I know of people who do that.
I just can’t get it right…it falls apart…can you guess what am I doing wrong??
Hi Suki! There’s normally a couple of things that can cause that. Please check: the oil/butter is spread out evenly over the pan, and that the pan is a good non-stick pan. Cooking with a lid also helps, as does a low heat and a little patience :). I hope that solves it for you!
🙂 tnx! Patience (and looooow heat) was the key ingredient! :)) loving the pancake
That is indeed the key 😀
Glad it turned out so well, Suki!
