The 2 Ingredient Banana Egg Pancakes (10 Min, Vegetarian)

1) Mash up bananas in a large bowl
2) Whisk eggs (using a fork is just fine!) and add to banana paste
3) Fry gently in a pan on low-medium heat with a little heated oil or butter
Oh so easy!
Pancakes. Fiddly and frustrating to make, fatty to eat. Taste awesome though. Surely there must be some sort of middle ground?
What if I told you it’s possible to make pancakes from just two ingredients – bananas and eggs? ‘MADNESS!’ I hear you cry. But it’s true.

One banana and two eggs will knock up a brilliant breakfast for one person – and one that’s full of vitamin b6 – which is normally found in fish and meat.

- 1 banana
- 2 egg
- ½ tsp coconut oil (or butter) for frying
Instructions
- Mash up bananas in a large bowl.1 banana
- Whisk eggs (using a fork is just fine!) and add to banana paste.2 egg

- Flip halfway through cooking (about 4 mins) with a large spatula.
NOTES
* 2 tbsp of flax seeds
* 1 tbsp of coconut powder
* A small handful of hazelnuts, almonds or walnuts
* 1 tbsp of peanut butter (we LOVE that combo!)
* 1 tbsp of protein powder
* 1 tbsp of raisins
* 1 tsp of cinnamon
* 1 tsp of vanilla extract
* A few thin slices of apple or pears
* Pumpkin puree (organic) Topping ideas:
* Honey
* Maple syrup
* Cherries, strawberries

I made them today and I enjoyed them very much. I could not get under them to turn them over so I just made them like scrambled eggs.
They still tasted great.

Hi Kenya, yes a few people have tried freezing them with success! I haven’t done it myself, but all reports point to a still-tasty pancake when reheated 🙂

I’ve been eating these every night for dinner. My friend suggested them when I was so tired of my normal go-to egg bake that I was gagging. I agree that they have a banana bread taste to me. Mine usually end up more scrambled than pancake but idc! I came here looking for add in suggestions, will be trying the PB2. Thank you!
Um, just tried this: 2 bananas, 4 eggs. Not for me. Super weird, like a banana omelette, it even looks like an omelette. I have heard that you can do this with egg whites only, maybe that would make more sense but this recipe I’m afraid I did not enjoy.
Sounds like the pancake turned out like it should, but you just didn’t like the taste. Well, that’s ok, can’t be for everyone.

Has anyone tried this with flaxseed meal as an egg replacement for a vegan pancake?
I’ve added flaxseed to the batter, and it’s great, but I haven’t tried a flax egg in this particular recipe, though I do love them. I’m very happy to give it a try! 1 tbsp flax seeds mixed with 3 tbsp hot water and stirred until sticky should do it for each egg replacement. Will try 🙂
