What if I told you it’s possible to make pancakes from just two ingredients – bananas and eggs? ‘MADNESS!’ I hear you cry. But it’s true.

Ingredients

  • 1 banana
  • 2 egg
  • ½ tsp coconut oil (or butter) for frying

Instructions

  • Mash up bananas in a large bowl.
    1 banana
  • Whisk eggs (using a fork is just fine!) and add to banana paste.
    2 egg
  • Fry gently in a pan on low-medium heat with a little heated oil or butter.
    ½ tsp coconut oil
  • Flip halfway through cooking (about 4 mins) with a large spatula.

NOTES

Tip: Add your personal fave toppings.
Make-ahead? Yes, batter can be made in advance.
Freezable: Yes, absolutely, but keep topping separate.

For the batter:
* 2 tbsp of flax seeds
* 1 tbsp of coconut powder
* A small handful of hazelnuts, almonds or walnuts
* 1 tbsp of peanut butter (we LOVE that combo!)
* 1 tbsp of protein powder
* 1 tbsp of raisins
* 1 tsp of cinnamon
* 1 tsp of vanilla extract
* A few thin slices of apple or pears
* Pumpkin puree (organic)
Topping ideas:
* Honey
* Maple syrup
* Cherries, strawberries
* Yogurt
* Chia seeds
* Sugar and lemon juice

  1. This is my favorite of all time vegan recipe. Quick and easy. I add a dash of ground cinnamon stick and it satisfies every need. . I make a bunch and refrigerate them and when I get munchy, wanting something special, I stack them up with almond butter between the cakes and a little maple syrup and I’m good! Sweet but not too carbo. Thank you for this great idea!

    I just made these this morning, added vanilla protein powder, peanut butter and cinnamon and oh boy were they delicious. I really recommend kicking the heat up to medium-medium-high as they got a better texture and we’re faster than the first one I cooked at medium-low.
    Will definitely be adding these to my breakfast rotation. Thanks!

    After I lowered my temperature to low /med and increased time, all was good. My eggs were not particularly fresh ( the kind that spread thin when frying.) My pan’s not non stick has seen better days. Thinking if I use fresher eggs that would make difference. Compensation: – put circle of egg/banana mix in heated buttered pan , cook for a minute or so, then place lid on the pan, steamed until top was almost cooked, flipped to finish cooking. Made flipping easier and shortened cook time, but still light brown both sides.

  6. I did not think these would be yummy, to be honest. It took a couple of bites for my brain to understand what I was tasting but the pancakes were actually pretty good! The banana provides enough sweetness to overcome the egg flavour. I added cinnamon and vanilla, as per suggestions in the comments. Thanks!! I’ll be making these again!

  7. Recipe is fine & all. “Pimp these recipes up”? Probably a better way to say you’re just enhancing or even “spicing them up” but yeah ya don’t need to throw “pimp” in there. Honestly good recipe. Remove the unnecessary.
