Ingredients

  • 1 banana
  • 2 egg
  • ½ tsp coconut oil (or butter) for frying

Instructions

  • Mash up bananas in a large bowl.
    1 banana
  • Whisk eggs (using a fork is just fine!) and add to banana paste.
    2 egg
  • Fry gently in a pan on low-medium heat with a little heated oil or butter.
    ½ tsp coconut oil
  • Flip halfway through cooking (about 4 mins) with a large spatula.

NOTES

Tip: Add your personal fave toppings.
Make-ahead? Yes, batter can be made in advance.
Freezable: Yes, absolutely, but keep topping separate.

For the batter:
* 2 tbsp of flax seeds
* 1 tbsp of coconut powder
* A small handful of hazelnuts, almonds or walnuts
* 1 tbsp of peanut butter (we LOVE that combo!)
* 1 tbsp of protein powder
* 1 tbsp of raisins
* 1 tsp of cinnamon
* 1 tsp of vanilla extract
* A few thin slices of apple or pears
* Pumpkin puree (organic)
Topping ideas:
* Honey
* Maple syrup
* Cherries, strawberries
* Yogurt
* Chia seeds
* Sugar and lemon juice

  2. Just made these for the 1st time, added vanilla and cinnamon. Used a hand mixer at high and it made the batter identical to pancake batter. They were AMAZING!!! No problem flipping them at all. They came out like regular pancakes- no chunks. I am blown away by this recipe and will be using it all the time. Thank you so much!

    WOW! Game changer for me. Used an overripe banana and whipped the egg separately then folded the 2 ingredients together in a container with a spout. Pour mixer onto a skillet lightly sprayed with cooking oil. Came out perfectly … sweet enough to eat without syrup … just added a few cut berries. Thanks for the post

    Soooooo perfect and yummy! I used a Immersion blender to make the batter nice and smooth. Then used a cast iron skillet with butter and coconut oil replaced as needed. Made 2 inch pancakes and they were perfect! Can’t wait to make more.

    Also, I make these into little picklets using a pie maker. Zero mess!!

    Maybe you have different bananas and eggs than I do, but this doesn’t work. The outcome didn’t have a pancake structure at all, it was more like an omelette with banana taste. I think these 2 ingredient banana-pancake recipes on the internet are not what they seem. To get a decent pancake you will need to add traditional ingredients (baking power, baking soda, …). So, I do not recommend.

    1. I strongly disagree with the baking soda, powder thing, in many parts of the world pancakes are super flat 🙂
      But sure, the texture is not like a pancake using flour and milk. But it doesn’t have to be. Taste is awesome and they work!

    2. For a more traditional “fluffy” pancake texture, try this recipe:
      1 ripe banana, mashed
      1 egg
      Dash of Cinnamon
      Dash of vanilla extract
      2-3 tbsp flour

      I make mini pancakes with this recipe.

    thanks for the recipe I LOVED it! Put some cinnamon and vanilla extract in and yummy! Need to use enough butter or oil so it doesn’t stick. Sue you need to tone it down a little honey. Did you not have your coffee yet? No need to be so negative theres too much of that in the world already
