Avocado Toast with a creamy, cheesy twist! Cottage cheese is the perfect partner to mashed avocado and makes lunch healthy and tasty.

Ingredients
- 2 slice wholegrain bread (ideally whole grain)
- 1 small avocado
- 2 tsp lemon (juice)
- ½ cup low fat cottage cheese (or use regular*)
- 2 spring onions
- Salt to taste
- Black pepper to taste
Instructions
- Mash your avocado, add salt and lemon.1 small avocado, Salt to taste, 2 tsp lemon
- Add a layer of cottage cheese on the toast.½ cup low fat cottage cheese, 2 slice wholegrain bread
- Garnish with chopped green onion and fresh pepper.2 spring onions, Black pepper to taste

*nutritional notes: we’ve used low fat cottage cheese in this recipe to save a few calories and a little fat, though naturally regular cottage cheese works wonderfully in this recipe too.
