Vegetarian Meal Plan Pack for Beginners – Week 3
Hi, it’s Hauke here with the meal plan for week 3!
This week has a slight Italian feel to it with Mediterranean Rice Bowl, Tuscan Kale and White Bean Soup, and Vegan Lentil Bolognese.
The snacks are really exciting too. Have you ever tried Shoyu Tamago or Isikiate?
I really hope that a vegetarian diet is getting better and better for you. Just reminding you how environmentally friendly and fully healthy it is.
So many super sources of protein and fiber in every recipe are guaranteed to curb your hunger and help maintain a healthy weight.
And this is an important step to reducing your food carbon footprint.

Top tips
- Prep the Soy sauce eggs in advance to give them enough time to marinate.
- Feel free to freeze any vegetables for the Easy Vegetable Frittata or buy frozen ones.
- Fresh herbs last for longer in an airtight container with damp kitchen paper inside.
- The Speedy Vegan Burrito wraps well so you can take it with you.
- Papaya and mango both work for the Thai Quinoa Salad. So choose whichever you like more.
Day 7 is all up to you. It’s a great day for leftovers, or if you want to go out to eat.
And don’t forget – if you have lots of leftover ingredients in the fridge we highly recommend turning them in to Buddha Bowls, Burrito Bowls or Roasted Veggie Dishes! There’s so much choice, and you can throw together virtually everything you have leftover with a tasty sauce!
Females/Males
Current advice suggests active females and sedentary males need about 2,000 calories per day. This is exactly what the meal plan provides.
If you are a less active female, think about skipping a few snacks.
If you are an active male consider having bigger and/or more snacks
