Although we do always encourage readers to try our new recipes, we don’t wax lyrical about them all too often – so these soy sauce eggs are a bit of an exception.
It’s not that often that a new recipe comes along that changes the way I eat, or becomes an instant mainstay in my weekly meals.
These Japanese marinated eggs are perfect in every bite and will most probably add new excitement to your meals as well as mine. Even the pickiest eaters tend to fall in love with soy sauce eggs.
In my humble opinion, eggs are one of the greatest foods we have available. Since reading an article a few years ago about the oldest woman in the world eating at least two eggs a day, I’ve been doing the same.
Well, nearly the same. She was FAR more hardcore than I am, and ate them raw. I cook mine, but hey.

As one of the best natural protein sources (especially for vegetarians, but also for the population in general), soy sauce eggs are a very filling snack or meal.
Protein keeps us feeling full and satiated. That means we’re less likely to turn to other snacks as soon as we get a pang of hunger.
When we want to gain muscle we need two things – a surplus of calories and a certain amount of protein (dependent on various factors like height, gender, weight and so on).
So whether we want to lose or gain weight, there is always a place for egg in my food life. Hard boiled eggs are one of my all time favourite snacks.

Why I love soy sauce eggs
Eggs are among the healthiest foods you can eat. One large egg provides 71.5 calories, 6.3 grams of high-quality protein and 4.8 grams of healthy fats like omega-3 with nearly zero carbs.
Eggs are relatively low in calories and remain one of the best foods to assist with weight management. Their protein and healthy fat balance delay the rate at which food leaves the stomach making you feel full for longer.
What’s more, eggs are a great source of vitamins and minerals such as vitamins A, B2, B12, D, folate, selenium, calcium, phosphorus, and zinc.

Eggs don’t take much time to prepare and can fit into any meal. You can eat shoyu tamago (soy sauce eggs) for lunch, dinner, or as a perfect egg-based snack and easily carry them with you anywhere.

What to do with ramen eggs
These soy marinated eggs go by different names – ramen eggs, soy sauce eggs, ajitsuke tamago or shoyu tamago. If you’re familiar with ramen or other noodle soups, you’ve surely seen delicious jammy eggs served on top.
This ajitsuke tamago recipe is perfect not only for noodles. You can pop ramen eggs into your lunch box and enjoy them anytime.
I tend to use these soy marinated eggs as a snack between meals. They fill me up nicely, taste even better than regular hard boiled eggs, and just offer something a little different.
They can also be used in salads, as toppings for bread or toast – or even soup. Basically however you would normally eat a hard boiled egg, you can do the same with ramen eggs.

The ramen egg marinade recipe is not only very flavourful and tasty but pretty simple. It’ll take an itsy-bitsy amount of time to prepare.

Ingredients
- 4 eggs
- 1 tsp sesame oil
- ⅓ cup low sodium soy sauce
- 2 tbsp water
- 1 ½ tsp honey
- 1 tbsp rice vinegar
- ¼ tsp chili flakes
- 1 clove garlic (crushed)
Instructions
- In a pot of boiling water, cook the eggs for 7 minutes. Immediately take off the heat into cold water. Allow to cool and peel.4 eggs
- Meanwhile, in a small bowl mix the sesame oil, soy sauce, honey, rice vinegar, water, chili flakes and crushed garlic clove.1 tsp sesame oil, ⅓ cup low sodium soy sauce, 1 ½ tsp honey, 1 tbsp rice vinegar, ¼ tsp chili flakes, 1 clove garlic, 2 tbsp water
- Marinate the peeled eggs in the soy sauce mix in the fridge for 1 hour up to 1 day. Flip the eggs around every once in a while to allow them to marinate equally from all sides.
- Cut in halves or fourths and enjoy alone or with noodles, soup, toast, salads, etc.
NOTES
- These are called Ajitsuke Tamago or Shoyu Tamago, also known as ramen eggs, jammy eggs marinated in a soy sauce broth flavored with spices and sugar.
- There are many variations of soft boiled or hard boiled eggs cooked or marinated in soy sauce in Asian cuisine (Chinese, Japanese, Korean, Mauritian, and more).

Question-how long/many times can you reuse the marinade?
Hi Amanda! I’m glad you like them, I really do too! Such a nice change from regular eggs. So far I’ve used the marinade twice, about 3 days apart. There’s not much in the sauce to go off super-quickly, so three or four days shouldn’t be an issue 🙂
