Sweet Potato Salad with Avocado and Lime

Ingredients

  • 1 large sweet potato (ca. 14oz / 400g)
  • 1 ripe avocado
  • 10 cherry tomatoes
  • 1 handful cashews (1 handful = 1oz / 30g)
  • 2 handfuls baby leaf (or your favourite) mild salad
  • 1 lime (zest and juice)
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  • Heat up the oven to 180°C/360°F.
  • Cut the sweet potato nto small cubes (see picture). Toss them in a bowl with ½ tsp salt and some of the olive oil, place them on a tray and put in the oven for about 15 minutes, until they’re soft.
  • Cut the cherry tomatoes into quarters, mash one half of the avocado, cut the other half into pieces. Put it all in a bowl and add the lime zest and juice and cashew nuts.
  • Season with salt, pepper and a little more olive oil.
  • Let the sweet potato cool down a bit and add it to the bowl as well.
  • Add the salad and give it a good toss. Ready!

NOTES

Jansen’s pro tip
Bake the sweet potato the night before so you can take the salad with you to work. When it’s cold, place it in a sealable lunch box or jar and add the lime juice, zest and olive oil. After that add the avocado, tomatoes - make sure they’re covered in lime juice. Finally, add the nuts and salad. Seal and take!
