Creamy Garlic Mushrooms on Toast

Ingredients
- 2 slices wholegrain bread
- 9 oz mushrooms (white or brown)
- 1 small onion
- 1 clove garlic
- 1 tsp olive oil
- 3.5 oz low fat cream cheese
- 2 tbsp soy sauce
- 1 tbsp parsley, fresh (1 tbsp fresh = 1 tsp dried)
- Salt and pepper to taste
- 2 tbsp Worcestershire sauce (vegetarian) (great if you have it!)
- 1 small handful walnuts
Optional
- 1 tbsp chives, fresh
Instructions
- Give the mushrooms a quick wash. Slice length-ways and add to a pan with olive oil on medium heat, frying for about five-six minutes. Add a dash of water as well.9 oz mushrooms, 1 tsp olive oil
- Chop the onion and garlic and add to the pan. Fry for another five minutes or so, until soft.1 small onion, 1 clove garlic
- Add the cream cheese, salt and pepper, parsley, soy and Worcestershire sauce.3.5 oz low fat cream cheese, 2 tbsp soy sauce, 1 tbsp parsley, fresh, Salt and pepper to taste, 2 tbsp Worcestershire sauce (vegetarian)
- Bring to the boil, then reduce heat and simmer for another five minutes. If the texture is too thick add a little bit of water.
