Creamy Mushroom Pasta
Garlic Mushrooms on Pasta

Ingredients
- 5.5 oz wholegrain pasta
- 5 tbsp water
- 2 tsp olive oil
- 10.5 oz mushrooms (white or brown)
- 1 onion
- 2 clove garlic
- 4 oz low fat cream cheese
- 2 tbsp soy sauce
- 1 tsp sugar
- 2 tbsp Worcestershire sauce (vegetarian) (great if you have it!)
- 2 tbsp parsley, fresh (1 tbsp fresh = 1 tsp dried)
- Salt and pepper to taste
- 1 tbsp walnuts
Instructions
- Cook the pasta according to package instructions.5.5 oz wholegrain pasta
- Give the mushrooms a quick wash. Slice length-ways and add to a pan with olive oil on medium heat, frying for about five-six minutes. Add a dash of water as well.10.5 oz mushrooms, 2 tsp olive oil, 5 tbsp water
- Chop the onion and garlic and add to the pan. Fry for another five minutes or so, until soft.1 onion, 2 clove garlic
- Add the cream cheese, salt and pepper, parsley, sugar, soy sauce and Worcestershire sauce (if you have it). Also add more water to make the sauce creamier.4 oz low fat cream cheese, 2 tbsp soy sauce, 2 tbsp Worcestershire sauce (vegetarian), 2 tbsp parsley, fresh, Salt and pepper to taste, 1 tsp sugar
- Bring to the boil, then reduce heat and simmer for another five minutes. If the texture is too thick add a little more water.5 tbsp water
- Assemble onto the pasta. Sprinkle parsley and walnuts on top for garnish. Voilà!1 tbsp walnuts

Make-ahead? Yes, prep the night before. It can be reheated.
