  • Cook the pasta according to package instructions.
    5.5 oz wholegrain pasta
  • Give the mushrooms a quick wash. Slice length-ways and add to a pan with olive oil on medium heat, frying for about five-six minutes. Add a dash of water as well.
    10.5 oz mushrooms, 2 tsp olive oil, 5 tbsp water
  • Chop the onion and garlic and add to the pan. Fry for another five minutes or so, until soft.

  • Add the cream cheese, salt and pepper, parsley, sugar, soy sauce and Worcestershire sauce (if you have it). Also add more water to make the sauce creamier.
    4 oz low fat cream cheese, 2 tbsp soy sauce, 2 tbsp Worcestershire sauce (vegetarian), 2 tbsp parsley, fresh, Salt and pepper to taste, 1 tsp sugar

  • Bring to the boil, then reduce heat and simmer for another five minutes. If the texture is too thick add a little more water.
    5 tbsp water
  • Assemble onto the pasta. Sprinkle parsley and walnuts on top for garnish. Voilà!
