Creamy garlic mushrooms with halloumi. Oh wow. If you like mushrooms, then this one is a must. You can find a quick link to creamy garlic mushrooms right here. This recipe can be made vegan by skipping the halloumi and making the mushrooms with coconut milk (see recipe).

Ingredients
- 1 large potato
- 2 oz halloumi cheese (2 oz = 60 g)
- Salt and pepper to taste
Creamy Garlic Mushrooms Sauce
- 4 oz mushrooms (white or brown)
- ½ small onion
- 1 clove garlic
- 1 tbsp olive oil
- 3 tbsp cream (make it vegan with coconut cream)
- 2 tsp soy sauce
- ½ tsp parsley, dried
- Salt and pepper to taste
Optional:
- 1 tbsp Worcestershire sauce (vegetarian) (great if you have it!)
Instructions
Creamy Garlic Mushrooms Sauce
- Give the mushrooms a quick wash.
- Slice length-ways and add the mushrooms to a pan on medium heat, frying for about five-six minutes. No oil needed 🙂
- Chop the onion and garlic and add to the pan. Fry for another five minutes or so, until soft.
- Add the cream, salt and pepper, parsley, soy and Worcestershire sauce.
- Bring to the boil, then reduce heat and simmer for another five minutes. Voilà!
Baked Potato
- Microwave the large potato for nine minutes. A medium potato needs seven minutes and a small potato needs five minutes. To add extra potatoes allow an extra four minutes for a large potato, three minutes for a medium potato and two minutes for a small potato. This is using a 1000w microwave – adjust for slightly longer or shorter if yours is a higher or lower power. Don't forget to pierce the potatoes with a fork a few times.
- Chop the halloumi into squares and fry in oil for about five minutes.
- When ready, slice a deep groove through the middle of the potato in both directions. Repeat the process diagonally.
- Add salt and pepper to the potato.
- Pour the creamy mushroom over the potato followed by fried halloumi on top.
- Enjoy!
