It must’ve been the TV show Peaky Blinders that made me come up with this name for our overnight oats. If you asked me if I would recommend the series (on Netflix, currently), then I’d say yes.
But it’s a close call. It has it’s weaknesses and you need to like the setting and gangster genre. Tommy Shelby is definitely a great anti-hero!
Mini TV reviews aside and either way, I can definitely recommend this overnight oats recipe.
What a great combo of peaches, pumpkin seeds, lemon juice and maple syrup! All goes really well together, refreshing and filling at the same time. Tip: once peaches are out of season substitute them for pears.

Ingredients
- ½ cup rolled oats
- ¾ cup soy milk (milk of choice)
- 1 peach (diced)
- 1 tsp maple syrup
- 1 tbsp pumpkin seeds
- 1 tsp lemon juice
Optional
- 2 mint, fresh (finely chopped)
Instructions
- Dice the peach, chop the pumpkin seeds and mint leaves.1 peach, 1 tbsp pumpkin seeds, 2 mint, fresh
- Throw everything in a jar, screw the lid on top, shake, and off it goes into the fridge. The next morning add a dash of milk, a sweetener (if you want) and enjoy 🙂½ cup rolled oats, ¾ cup soy milk, 1 tsp maple syrup, 1 tsp lemon juice
