3. Sweet Potato & Feta Bake

This sweet potato bake recipe with feta is the perfect comfort meal. Like a casserole, but full of nutritious veggies for that delicious health kick!

Ingredients
Casserole:
- 1 tsp olive oil
- 1 sweet potato
- ½ onion
- 3 beets, precooked
- ¼ cup water
- 1 tsp sweet paprika
- ¼ tsp salt
Toppings:
- 1 handful peanuts
- 2.5 oz low fat feta cheese (roughly 75g)
- 1 spring onions
Instructions
- Preheat the oven to 200C/400F and grab a big baking tray.
- Give the sweet potato a quick wash, then cut them into bite sized chunks. Same with the beets, cut them into bite sized chunks.1 sweet potato, 3 beets, precooked
- Peel and cut the onion into chunks.½ onion
- Everything goes into the tray. Now add olive oil, paprika powder and salt. Give it a good mix.1 tsp olive oil, 1 tsp sweet paprika, ¼ tsp salt
- Finally, add water.¼ cup water
- Off it goes into the oven for 45 minutes.
- Get the dressing ready: in a small bowl mix together lime, olive oil and a bit of salt.½ lime, juiced, 1 tbsp olive oil, Pinch salt
- Chop the spring onion finely.1 spring onions
- After 45 minutes check, if the potatoes are tender. If yes, get the bake out of the oven.
- Time for the feta cheese, spring onions and peanuts. Sprinkle all on top of the dish.2.5 oz low fat feta cheese, 1 handful peanuts
- Lastly, drizzle over the dressing.
- Enjoy!

It’s advisable to poke holes in your sweet potatoes if cooking them whole. It prevents the build-up of steam which could otherwise see them explode in your oven!
