Make these sweetcorn fritters your new go-to recipe with ingredients you’ll always find in your kitchen. They’re vegan-friendly, too! If you want, try it out right away! Delicious hot or cold. You’ll find the recipe below:
Ingredients
- ⅓ cup wholegrain flour (⅓ cup = 45g)
- ½ tsp caraway seeds
- ¼ tsp cayenne pepper
- ½ tsp salt
- 1 egg (or mix 1 tbsp ground flaxseed with 3 tbsp hot water, stir and let rest for a min to create a ‘flax egg’)
- 6 tbsp water
- ½ medium red onion
- 1 heaped cup sweetcorn
- 2 tbsp olive oil
Optional:
- ½ cup sour cream to serve (½ cup = 120g)
Instructions
- In a bowl add flour, caraway seeds, cayenne pepper, salt, egg and water. Mix to a batter.
- Finely dice the red onion and rinse and drain the sweetcorn. Mix in both to the batter.
- Add the olive oil to a pan and set to medium heat.
- Now, ideally with a big spoon, take a burger-sized amount of the batter and place it into the pan. If needed adjust slightly with the spoon to make the patties look nice.
- Fry flat in the pan 5 minutes each side or until golden brown.
- If wanted, serve with a salad/potatoes/rice and your sour cream. Enjoy 🙂

For the past 3 blogs or so, I’ve noticed 1) the ads that are popping up are crazy, similar to the type when you go to a tabloid site or some sketchy site. Do you see this? They are mostly “local to my area,” so Idk if you do see them. 2) also noticed the scroll is very choppy and inconsistent, trying to accommodate all of the new ads? ♀️ very time this happens, I’m clicking a link from your newsletter in my email account (not going directly to your site. Hope this info helps!
