For a lot of people, the meals that spring to mind when time is short and you can’t be bothered to cook anything elaborate are not vegan.

Maybe your lazy dishes are omelette or mac n cheese.. Both of which are delicious, but not great if you’re cutting out dairy!

Pasta dishes are, of course, a great option. Who knew there were so many vegan pasta sauces that aren’t just tomato based?

For example, this quick easy vegan meal of roasted red pepper pasta uses cashews to make a rich and creamy sauce that is ready in only 15 minutes.

Cashews are a useful ingredient in vegan cooking generally – you can use them to make creamy sauces like this one, cheese, cheesecake, milk and many other vegan alternatives.

Another great lazy vegan recipe is a traybake. These may take a bit longer to cook, but they are super low input. All you have to do is toss the ingredients in seasoning and whack them in the oven!

  • 2 ripe banana
  • 1 cup rolled oats (oatmeal or porridge oats work really well)



  • Preheat the oven to 180°C (360°F)
  • Get a bowl and and mash the bananas until they’re mushy
  • Add the cup of oats and any of the optional ingredients
  • Stir until everything is nicely mixed
  • Put baking paper on the tray so the cookies don’t stick. If you don’t have that make sure to grease the baking tray with butter (or olive oil if you’re vegan)
  • To make the cookie shape just grab a spoon and scoop a decent amount from the mixture onto the baking tray like I did in the photo above. It’s super quick and easy.
  • Off it goes into the oven for about 15 – 20 minutes.
  • Done!

EQUIPMENT: You just need a solid baking tray and some parchment paper, cool as.
