We need no excuses to share banana recipes. One of the most loved fruits the world over they come in all sorts of varieties and sizes, and are readily (and cheaply) available most of the year round (although it wasn’t always so).

Insanely nutritious, they sport huge amounts of potassium, vitamin B6 and fibre and help with cardiovascular health, lowering the risk of heart disease and strokes. And sooooo much more! (1).

Finding new, tasty and fun ways to incorporate them into your diet isn’t always easy however, so we’ve put together a list of several of our favourites from all around the world wide interweb thing. You’re welcome!

Ingredients

  • 1 banana
  • 2 eggs

Instructions

  • Mash up bananas in a large bowl.
  • Whisk eggs (using a fork is just fine!) and add to banana paste.
  • Fry gently in a pan on low-medium heat with a little heated oil or butter.

NOTES

Update: Wow! We received a lot of ideas for extra ingredients to pimp these pancakes up. Check them out below! (All optional of course)
For the batter:
* 2 tbsp of flax seeds
* 1 tbsp of coconut powder
* A small handful of hazelnuts, almonds or walnuts
* 1 tbsp of peanut butter (we LOVE that combo!)
* 1 tbsp of protein powder
* 1 tbsp of raisins
* 1 tsp of cinnamon
* 1 tsp of vanilla extract
* A few thin slices of apple or pears
* Pumpkin puree (organic)
Topping ideas:
* Honey
* Maple syrup
* Cherries, strawberries
* Yogurt
* Sugar and lemon juice

I recently started using coconut oil instead of butter for frying these fellas and I have to say it’s really good! If you want, give [asa2_textlink asin=”B003OGKCDC” target=”_blank” rel=”nofollow”]coconut oil[/asa2_textlink] a shot.

    I don’t know how you can say these recipes are healthy as all are high in sugar. Very misleading

    1. Hi Graham, all banana-based recipes will be high in sugar to an extent – but the sugars in bananas are mostly naturally occurring and are not the refined and added sugars that we’re usually warned to be wary of 🙂
